Grain-Free Buffalo Taquitos

I have this habit of taking peeks at what other people are buying at the grocery store, so when we were in Whole Foods a couple weeks ago I checked out a local shopper’s cart and saw these Paleo Wraps.  Oh my am I glad I did!  Because last week I went on a hunt for said wraps and easily found them with the other tortillas.  Jake and I decided to give the turmeric ones a try since the spice has some amazing anti-inflammatory qualities. Although you can do so many things with these wraps, we have an extreme affinity for all things Mexican food and tried out a simple taquito.

 What you need:

1 Organic large yellow onion

1 Organic avocado

2 Organic bell peppers

Paleo Wraps

1 lb buffalo meat

1/4 C sour cream (skip this to keep it paleo/dairy-free)

2 T Grass-fed butter

Seasonings – we found these amazing seasonings from Flavor God (non-GMO, made fresh to order!)

Here’s what you do:

2. Cut onion into strips by cutting with the grain to create onion discs then cut in half once

3. Chop bell peppers into 1/4″ strips

4. Add butter to pan and cook on medium heat

5. Add onions and peppers once butter is melted

6. Sprinkle generously with seasonings – I used Lemon & Garlic on the veggies

7. Stir and cook until desired tenderness is reached

8. Place buffalo meat in pan and turn up to medium heat

9. Cook until no longer pink


11. Add seasoning – I used Everything Spicy

12. Cut wraps in half

13. Place a couple spoonfuls of meat at the edge of the wrap

14. Carefully create a tight roll as you roll the wrap around the meat – the juices from the meat should help keep the wrap together

15.Place on baking sheet

16. Bake at 325 *F for 6 minutes

17. While the taquitos are baking, slice up the avocado and mash in a bowl

**optional: for a creamy dip, mix in sour cream with mashed avocado
