Loaded Sweet Potato Soup

Loaded potato soup has always been a favorite of mine but russet potatoes don’t have the nutrient value of sweet potatoes, so in an attempt to make my beloved soup more body friendly, I’ve put together this yummy recipe.  I like to top mine with taco flavored buffalo meat and avocados but let your imagination run wild and let me know what you try!

WHAT YOU NEED:

2 Organic large sweet potatoes

2 C chicken broth – homemade stock works best 🙂

1 T Organic cinnamon

1/2 t Himalayan salt

1 t Organic garlic powder

1lb Buffalo meet

Taco seasoning

Organic Avocados – 1/2 per serving

*Makes 4 servings

WHAT YOU DO:

ingredients bake potatoes meat cook meat chicken stock

mix into blender blend avocado sweet potato soup

1. Preheat oven to 400*F

2. Wash potatoes and pierce several times with fork

3. Place potatoes on parchment paper on a baking sheet and bake until tender about 75 minutes – bigger potatoes may need longer

4. Place buffalo meat in pan and cook at medium heat until no longer pink

5. DO NOT DRAIN THE FAT!

6. Add seasoning to meat and combine – for this recipe we used the southwest taco from Simply Organic

7. Once potatoes are done, slice open and let cool for 5 minutes

8. Pour chicken stock into a blender

9. Scoop out sweet potatoes from skin and place in blender

10. Add cinnamon, salt, and garlic powder

11. Blend ingredients – time will vary based on blender (with the Vitamix we start at Variable 1 and slowly turn up to Variable 10, then up to High for about 3 minutes using the tamper as needed)

12. Wash avocados and cut in half

13. Slice avocados lengthwise and width-wise

14. Pour soup into bowls and top with meat and avocado (or your other favorite toppings)
